Ingredients

  • 4 Mission® Potato  Wraps                  
  • 10 Eggs          
  • 40g Unsalted butter, diced      
  • 2 tbsp Sour Cream                                          
  • Salt & Black Pepper, to taste
  • Few snipped Chives
  • 300g Smoked Salmon

Instructions

 

1. Break the eggs into a bowl and beat together. Pour the eggs into a saucepan and place on a very low heat. Add half of the butter and stir the eggs constantly. When the mixture begins to set, add the remaining butter and  continue stirring the eggs for 3-4 minutes to scramble.

2. Remove from the heat, add the sour cream and season with salt and freshly ground black pepper. Add the chives.

3. Warm Mini Wraps according to heating instructions. Fold them in half and arrange the scrambled eggs and smoked salmon on one end of the Mini Wrap. Fold the other end to cover just part of the eggs and smoked salmon.

4. Serve immediately
