Ingredients

  • 170 g BBQ Mission Tortilla Chips
  • 3 tbsp oil
  • 1 tbsp garlic, chopped
  • 4 tbsp chili paste
  • 30 g tamarind pulp
  • 150 ml water
  • 150 g peanuts, toasted
  • 100 g white baits (small ikan bilis), fried till crispy
  • Salt to taste
  • 4 tbsp sugar

Instructions

 

  1. Heat oil to sauté garlic and chili paste until fragrant.
  2. Make tamarind juice by mixing together tamarind pulp and water.
  3. Add seasoning and tamarind juice to the chili paste. Bring to boil.
  4. Stir in tortilla chips and peanuts. Mix well until tortilla chips and peanuts are well-coated in the paste. Switch off fire. Add in white baits and mix well again.
  5. Transfer to a lined baking tray and bake in a preheated oven at 160oC for 10 minutes. Leave to cool before serving.

 

To save time, peanuts and white baits can be prepared ahead and kept in airtight containers.
