Nothing beats the sweet combination of gula Melaka and coconut milk, infused with the flavour of pandan. The bananas add extra sweetness and texture, while salt is all-important to temper and round-off the sweetness of this delectable dessert.

Ingredients

3 - 4 Mission Wholegrain Wraps
150 g gula Melaka, cut into small pieces
9 tbsp water
5 pandan leaves, washed and tied into a knot
30 g plain flour
1/8 tsp salt
450 ml thick coconut milk
6 ripe bananas (“pisang emas” or “pisang raja”), peeled and cut into 1½ cm slant-wise

Instructions

 

  1. Bring gula Melaka, water and pandan leaves to boil. Strain and re-boil in a clean pot.
  2. In a small bowl, mix together plain flour and salt. Gradually add in coconut milk and stir well. Strain into the sugar syrup.
  3. Add the bananas and stir gently.
  4. Let it come to a boil and cook for about a minute. Remove from heat.
  5. Cut the wraps into desired sizes and bake in a preheated oven at 160oC for 10 – 12 minutes or until golden brown. Serve with banana sauce.

Use ripe bananas for extra sweetness and nutrients.

Buy a good quality gula Melaka that is dark brown in colour with a soft centre.
