Multigrain Chips Corn Muffins

Ingredients

  • 2 cups Mission Multigrain Chips, crushed (some extra chips for decoration)
  • ¾ cup All purpose flour
  • ½ cup Corn meal
  • 3 tsp Baking powder
  • ½ tsp Salt
  • ½ cup Sugar
  • 2 Eggs, Beaten
  • 1 cup Evaporated milk
  • ½ cup Cream of corn
  • ½ cup Melted butter, a little extra for greasing muffin pan

Instructions

 

 

  1. In a large bowl, whisk the crushed chips, all purpose flour, corn meal, baking powder, salt and sugar together until well combined.
  2. Add in eggs, evaporated milk, cream of corn and melted butter and mix evenly so that it’s not clumpy.
  3. Spoon mixture into greased muffin pan to three quarters full.
  4. Preheat oven to 180°C and bake for approx. 20 mins. Break some chips and use the corners and press into the middle of the muffins. Serve while hot.
